peanut butter blossoms– halloween edition!!

I DON’T KNOW about you guys but back in the salad days of my youth halloween was, like, the coolest thing ever.

I mean it just felt so much more exciting, you know?? And my family and I would always have these schnazzy coordinating costumes —

like one year we were cowboys and indians haha get it because we’re indian??

one year we were bees and beekeepers wow

and one year I was a bathtub?? can’t really remember how that tied into the rest of the family oh well

— but anyways halloween was like the most magical night and we would have a rockin’ party in the lobby with pizza and drinks but by that point the party had only JUST begun because after that we went around the building and collected like 231 pounds of candy and went back to the apartment and traded with each other and watched “it’s the great pumpkin charlie brown” and went to sleep full of happiness and joy !!!

Over my many years of celebrating this holiday I have come to the sad and depressing conclusion that maybe halloween isn’t really all it’s cracked up to be. I mean the rockin’ halloween party is more like having to make small talk with a few of my creepy neighbors while a disturbing plug-in zombie is in the corner making freaky sounds. The trick-or-treating is basically just stopping at like 12 doors (many of which are half-eaten bowls of candy set outside the door). The whole candy trading idea usually fails miserably because my siblings get into a hissy fit over the sour punch straws or something. AND I FORGOT TO TAPE IT’S THE GREAT PUMPKIN CHARLIE BROWN THIS YEAR

so basically my halloween was pretty LAME this year but hopefully yours wasn’t!! and anyways I think we can all agree that christmas is 72x cooler than halloween.

anyways….. as it is almost a full week after halloween I am sure that you’re all drowning in halloween candy, yes?? 

WELL HAVE I GOT A SOLUTION FOR YOU

except in a muffin tin??

and with halloween candy instead of regular hershey kisses??!?!

(ok I guess these aren’t really pb blossoms)

I’m SURE you’re all wondering where I got this ingenious idea from… and I can’t really take all the credit because, truth be told, these have been haunting me every since I saw them on the pioneer woman— except she used premade dough (which both shocked and appalled me) so I had to adapt it a little bit because I refuse to stoop to that level.

so I wanted to find a peanut butter dough recipe that wasn’t too crumbly ya feel!! This one was a betty crocker recipe (I think?) and although it worked fine I’m 200% sure that there’s a better peanut butter cookie recipe out there lurking about somewhere… so if any of you know of any superbly soft and peanut buttery cookie dough recipes please share the love!!

(ps for the good but not great betty crocker cookies you’re gonna start out with an egg, butter + shortening, peanut butter, and 2 types of sugar)

first off dump both the sugars into your mixing bowl!!

(also I would like to take a minute for us all to praise and appreciate the suave-ness of brown sugar)

then dump in some other stuff!! (aka butter, shortening and egg)

DONT FORGET THE SHINING STAR peanut butter!!

also PRO TIP try using plastic wrap to keep the peanut butter from getting super annoying!

OK now you’re done mixing

use your super cute mini ice cream scoop to scoop approximately 9128 tiny scoops of dough into your mini muffin pan!

also another PRO TIP (!! just kidding more like amateur tip)

if you don’t own baking spray for some reason (lol us)

and you don’t wanna butter 9128 individual muffin holes

then just wipe the muffin holes with vegetable oil before you scoop the dough in!! (totally works yo!)

while the dough is CHILLING, enlist your younger siblings to gather all of their peanut butter/chocolate-esque candies from their halloween bags

(then end up having to sift through the candy yourself because your siblings go into a conniption fit every 10 seconds)

as soon as the cookies come out of the oven, make sure to press the candy in right away– the heat from the cookie is what makes the candy all melty (just like a pb blossom)!!

anyways if you had a sub-par halloween, my recommendation to you is to drown your sorrows in peanut butter cookie cups!!

actually, feel free to drown all sorrows, halloween related or not, in these cookies.

they will understand!!

peanut butter cookie dough:

adapted from betty crocker

ingredients:

 – 1/2 cup granulated sugar
 – 1/2 cup packed brown sugar
 – 1/2 cup peanut butter
 – 1/4 cup shortening
 – 1/4 cup butter or margarine, softened
 – 1 egg
 – 1 1/4 cups all-purpose flour
 – 3/4 teaspoon baking soda
 – 1/2 teaspoon baking powder
 – 1/4 teaspoon salt

instructions:

  1. Mix sugars, peanut butter, shortening, butter and egg in large bowl. Stir in remaining ingredients. Cover and refrigerate about 2 hours or until firm.
  2. Heat oven to 375ºF.
  3. Using a mini-scoop, scoop dough into greased mini muffin pan.
  4. Bake 9 to 10 minutes or until light golden brown. Quickly press chocolates into the top of each cookie; remove after 5-10 minutes.
